Summer Delight Casserole

This recipe comes fresh from your backyard garden (and perhaps the cornfield behind your house if you live in the country)

Batter:

1 cup whole grain flour (or other "ancient grain" flours)

1 cup of either: Greek yogurt or ricotta cheese

2 tbsp baking powder

1 egg

2 tsp paprika

Filling:

1 large red belle pepper diced

1 large zucchini, sliced and diced

2 ears of fresh corn

2 hotdogs (may substitute ham or kielbasa)

3/4 cup diced or shredded cheddar cheese (for variations try muenster or low fat cream cheese)

Preheat oven to 350

Mix batter in one bowl

place filling in casserole dish

Bake for about 30-40 mins until puffy and slightly brown on top
